Unsalted Butter 100 gm
Curd 3/4 cup
Vanilla Essence 1 tsp
Sugar 1 Cup
Flour 2 Cup
Baking Powder 1 1/2 tsp
Baking Soda 3/4 tsp
Chopped Strawberry 1 cup
Milk 1/2 cup
Cut butter in small pieces and add sugar to it. Mix well to form a smoth mixture.
Add curd and vanilla and mix untill sugar dissolves.
Grind 3/4 cup strawberries to make puree. Add puree and remaining chopped strawbrries to curd mixture.
In another bowl, seive flour, baking powder and baking soda together.
Add flour mixture and milk alternately to butter mixture and mix well.
Add milk in the mixture to adjust consistency.
Grease the cake tin and dust with flour. Remove excess flour.
Pour the mixture and bake it in preheated oven at 180 degree for 30 - 40 minutes.
For checking if the cake is baked, prick a toothpick in the cake. If the toothpick comes out clean, cake is baked completely. Otherwise bake it for a few minutes again.
Mix 2 tbsp sugar with 1/2 cup water to make sugar syrup.
Cut the cake into two slices horizontally and lightly brush them with sugar syrup.
Place the lower peice of the cake and spread vanilla cream on it. You can also use white chocolate ganache instead of vanilla cream.
Place the upper peice on it and coat the cake with frosting completely and refrigerate for 15-20 minutes.
Cut fresh strawberries vertically into two parts and place them in circular pattern on top of frosted cake.
Garnish with tutti fruitti and chopped nuts.
